I haven't been around very much lately because I went into remission and immediately started a business to try and reclaim my financial mess (the business is me doing small-scale construction jobs, I REALLY got my health back to be able to do this). It leaves me virtually no time these days, which is fine since it's all by choice.

Anyway, I have had a forum on Lymefriends.org where I was posting candida-diet-friendly and gluten-free recipes for the last couple of years- and I just updated it with a couple of very easy gluten-free bread recipes (one's actually a pizza crust recipe). They aren't perfectly low-carb (ie people with very bad candida may want to avoid grains as much as possible) but they're better than, say, white flour breads.
Here's the link- it's really worth signing up for Lymefriends in order to browse the whole recipe collection. I think other Lyme patients have other Lyme diets and recipe forums there as well.
Additionally, I have a few threads about alternative sweeteners, and about where to mail-order 'odd' ingredients if you can't get to a health-food store or are too fatigued to do that kind of shopping:

Gluten Free CHESTNUT BREAD (and chestnut "flour")
Chestnuts are VERY moist, flavorful. I think they would hold up the best of any nut due to their unique texture and ability to retain moisture. ------------------------------------------
