I am looking for a homemade coconut ice cream recipe that is made from good food and nothing we should not be eating.
Or.....any other smoothie type recipe that is wholesome. Anyone have any sites they go to for good Lyme friendly recipes?

"Almond Joy" Smoothie with berries... (adapted form our awesome health food store in Warrenton, VA)
1) 1 frozen banana 2) handful of frozen berries (blueberry, blackberry, raspberry) 3) a few spoons canned coconut milk (with the fat) 4) about 1/2 cup coconut rasps (with the fat) 5) a spoon of raw almond butter 6) about 1/2 cup almond milk (unsweetened) 7) about 1/2 cup Hemp milk (unsweetened) 8) 1-2 spoons of unsweetened cocoa powder
blend and enjoy!
I use everything organic, too.

- When freezing in serving sized glass jars, fill only 3/4 full so there is room for the mixture to expand and it won't crack the jar.
The consistency will not be like what we are used to, however, if set out to thaw for about 10 minutes, it becomes a creamy, icy treat.
I recently did something similar to this and it worked well. Nutmeg & or vanilla are nice, too, depending upon the ingredients.
I did not use a nut butter but added soft nuts like walnuts and pecans first to the blender to mix up well in a liquid.
A bit of stevia, a bit of honey if whatever fruit used is too tart.
I did not have coconut milk on hand but used some coconut oil. It's important to have some fat in it for consistency AND to help balance the glucose levels afterward.
Nuts & hemp help by adding protein & fat.
Caution: hemp protein powder can be great in a smoothie but the kind I used does NOT have the right consistency (I found that experiment a disaster). Go for the hemp milk for ice cream. -
