Not my fave either!! Bleah. The only way I can tolerate it is to make kale chips, but my husband nearly gagged from the smell.

- Kale is great lightly steamed or sautéed. Eating it raw (other than ground up in a smoothie) can be just too rough to digest (or to even chew in the first place).
Sometimes, though, VERY finely chopped can work in a salad. The tough fibers have to be cut. This is a great to add to soup just a minute before taking it off the heat - just until that green color just pops out at you. All that green goodness.

- Could be that the kale was too old. Once it passes it's prime, it does smell like dirty socks and can taste the same. Due to little money, I've forced myself to just go ahead and cook kale that should have been tossed out.
Once. Never again. I can tell by the smell.
However, when fresh, it has a fresh smell and taste. Still, raw can be rather rough. For salads, I'd prefer lightly steam and then drained, well chilled in fridge overnight before using as PART (never all) of the salad greens.
The thing is that we literally REQUIRE leafy greens every day. And as many leave collards out, chard, spinach and bok choy have to take up the slack. There are many varieties of kale, you might want to try a different kind, be sure it's fresh and prepare it differently.
Otherwise for the leafy green requirement of the body, it can get boring and limited. Most lettuces do not have the depth of nutrients and longevity in the body as do the stronger leafy greens.
Both chard and spinach can be rougher on some. Kale contains less of the oxalic acid (sp?) so it's much more utilitarian.
When sautéed with onions, shallots, garlic, leeks or even fennel bulb chopped, kale can be very delicious.
Finely chopped, added into a soup or stew just before serving, kale can be a nice touch yet blend into the soup.
Then there is the full range of garden herbs to consider so that it can become something quite enjoyable. Power packed goodness for our mitochondria. And if our mitochondria can't get better, neither can we.
Aside from our mitochondria (which is inside EVERY cell) our red blood cells require us to consume leafy greens each day, too. They need this green goodness to help give us energy.
Yet, if kale is out of the picture, there are others. Just be sure leafy greens are a plenty at each meal. -

Can you tell I used to write commercials? But I could never write what I did not believe or find true - didn't last long in that department.
What really woke up my love affair with good food was reading the very funny, gut busting culinary descriptions of a mother's mis-fires in her book "Tender at the Bone" by Ruth Reichl, a long time food writer / critic).

Because of this discussion, I went to Jamba Juice today, prepared to order a juice with, yes, kale in it, massaged or unmassaged.
And they didn't have anymore of it! There was a run on the kale today - can you believe that??!! I had to settle for berries and sherbets...

The rest of the kale finally met its maker. Took a leap into my special compost pile with a little boot from me. The next day I went out there again and found a little piece of paper with a note that said...
``Try feeding us raw kale again and we promise, no fish you will catch. Mr. and Mrs. Worm and our 2,000,000 children.``

News Item: McDonald's embracing new ingredient: Kale
Lisa McComb, a McDonald's representative, said in an email the kale is included in a Turkey Sausage & Egg White bowl, which also has spinach and bruschetta.
On Wednesday, analyst Mark Kalinowski had also noted that McDonald's was introducing three salads in Canada that have kale as an ingredient.
The embrace of kale may seem odd to some, considering McDonald's recently ran an ad that celebrated the Big Mac and mocked trendy ingredients like soy, quinoa, Greek yogurt - and kale. -----------
