I feel like I have given up everything I like to help battle this disease. So, I switched to decaf coffee a while ago and only do one cup at breakfast and kicked dairy out of my diet to. Trying to find a non dairy creamer I come across So Delicious Coconut Milk Creamer and find it has carrageenan. Is it that bad...this one thing???? I read conflicting arguments on this one.

If this is a no-no, I might try MimicCream Coffee Creamer or just plain powdered coconut milk for creamer.

Carrageenan can be good - but not necessarily. When reading the conflicting information, consider the source and their expertise for evaluating.

Turtle Mountain is a very good company. You just have to study all you can on carrageenan, then call Turtle Mountain and talk to them about how they process theirs, etc.

Be aware that there is also evaporated cane juice. You might do better with just adding coconut milk or a commercial almond milk that has no sugar - or make your own almond milk (or other nut milk) in a blender.

As carrageenan is the last ingredient, that means it's the lowest amount of all ingredients.

powdered coconut milk ?

Why powdered? Why not just coconut milk? No need to find mimics and dehydrated versions. Get a can of good organic coconut milk. Shake, open, poor into a nice jar and it will keep in your fridge for several day.

There is usually a phone number or website on the label. Call the company to find out exactly how many days this will keep once opened. Once opened, NEVER store any foods in the can. Always transfer to glass with a tight lid.

Best not to store in the fridge door, though, as it might not stay cold enough.

Making your own nut milk can take just a minute and that will keep in fridge for a few days, too. The left over ground nuts can go in oatmeal or soups.

You have to soak almonds overnight (not sure about hazelnuts but they may require soaking and rinsing first) . . .

but WALNUTS or PECANS do not have to be soaked as they are softer, more fatty nuts. Just puree 1/2 cup soft nuts in 1 cup of water, strain and you have a delicious coffee or tea creamer.

I avoid carrageenan since it has been linked to colitis and has used to induce colitis in mice. I don't know if it is truly that bad, but as an IBD suffer, I make an effort to avoid it.

Why not use coconut cream for a coffee creamer? I always drank mine black so maybe I'm way off base, but this is what I might use if in your situation.
