So I have some weird habits/ symptoms I was wondering if anyone else shares...
The first thing I do is constantly check my pulse...I do it if I feel tired, weak or just off. Its always around 65-70 and this is normal for me. I was an athlete all my life and in my early teens my resting pulse was actually 44bpm. No other symptoms with this really no dizziness, palpitations etc...
The other symptom is shortness of breath but its not like regular S.O.B it comes on mostly 1.5-2.5 hours after eating or while sitting in my car. It is really noticeable after eating cause it is like clockwork every night.
I dont think its really related to babs cause my lyme symptoms arent that bad... just on ceftin my fatigue greatly decreased, I work 40 hours a week outside, doing laborish task and seem to have no problem completing them, well till the end of the day then im pretty tired.
The shortness of breath is pretty pronounced two hours after eating and it doesnt seem to matter how I eat.

Just a thought... Have you been checked/screened for Diabets?

This could likely just be anxiety caused by the chronic lyme. You may want to try some aromatherapy, relaxation techniques, deep breathing, meditation, positive thinking, distracting yourself, talk therapy etc.
You may want to try eating several smaller meals throughout the day. The shortness of breath could occur if you have too large a meal, especially if it is high in carbohydrates.

Also the shortness of breath could be reactive hypoglycemia so when you're feeling short of breath trying eating a healthy snack and see if that helps.

I experience this difficulty breathing after eating also. For me it comes from muscle spasms in and around my rib cage. My stomach gets full and puts more pressure on my rib cage and causes spasms. Most of the time they are not painful just tight and contracted.

I have not had any specific test for diabetes but on all blood test my sugar/ insulin levels are normal.
Thanks for all the helpful replies! I will give them a try I do eat very large meals so I'll try to spread them out.

I would check for both food intolerances (not something you can test for) or as someone else mentioned, hypoglycemia.
Food sensitivity/intolerance can cause all sorts of different symptoms, including shortness of breath and fatigue. So can hypoglycemia.
The best/only way to really check for food intolerance is to go on an elimination diet.
Many folks with chronic inflammation end up with different food sensitivities or even allergies.
For instance, I can't have dairy, gluten, sugar, alcohol, caffeine, or nightshades (potatoes, tomatoes, bell and other peppers, paprika, goji berries, gooseberries, eggplant, etc.).
Many Lyme & co patients find that once they have completed proper antibiotic/etc. treatment, they are able to eat some or all of their previously problematic foods.
I'm not sure what the best way for testing or diagnosing hypoglycemia is, beyond your physician's clinical judgment or your symptom history. The glucose tolerance test supposedly is not to be used anymore as it can be harmful to someone with the condition.
